Mexican Lasagna

Dang it! Another great recipe without a photo and we found our camera and everything! Will I ever get the hang of it!!!

Anyway! The other night, last night, I made Mexican lasagna! There is no pasta in it and we only call it that because you layer it like a lasagna!

What you need:

  • 2.5 lbs hamburger meat
  • 1 large can of green enchilada sauce
  • 12 corn tortillas
  • 1 large can of refried beans
  • 2 lbs shredded cheese
  • your favorite Mexican seasonings. I use Mrs. Dash Southwest Chipotle, Garlic Powder and Pepper

What you do:

  1. Preheat oven to 350 degrees F
  2. Brown ground beef.
  3. While its cooking, add your meat seasonings so they cook in nicely
  4. Warm up the refried beans in the microwave for 2 minutes. Take them out of the can first silly.
  5. Drain the grease off of the hamburger meat
  6. Add the can of enchilada sauce and mix well.
  7. Coat a 13×9 glass baking dish with oil
  8. Line the bottom of the pan with 6 tortillas
  9. Spread 1/2 the refried beans on the tortillas
  10. Add 1/2 the meat sauce and spread evenly over the beans
  11. Sprinkle 1/2 the cheese over the meat sauce
  12. Lay the other 6 tortillas over the cheese
  13. Repeat steps 9 through 11, ending with cheese.
  14. If you prefer, leave off the last layer of cheese.
  15. Bake for 1/2 hour, add the last layer of cheese during the last 15 minutes
  16. Slice into squares and enjoy!

This pan feeds my family of 7 when they are all here plus leftovers!!!
