Mexican Lasagna

Dang it! Another great recipe without a photo and we found our camera and everything! Will I ever get the hang of it!!!
Anyway! The other night, last night, I made Mexican lasagna! There is no pasta in it and we only call it that because you layer it like a lasagna!
What you need:
- 2.5 lbs hamburger meat
- 1 large can of green enchilada sauce
- 12 corn tortillas
- 1 large can of refried beans
- 2 lbs shredded cheese
- your favorite Mexican seasonings. I use Mrs. Dash Southwest Chipotle, Garlic Powder and Pepper
What you do:
- Preheat oven to 350 degrees F
- Brown ground beef.
- While its cooking, add your meat seasonings so they cook in nicely
- Warm up the refried beans in the microwave for 2 minutes. Take them out of the can first silly.
- Drain the grease off of the hamburger meat
- Add the can of enchilada sauce and mix well.
- Coat a 13×9 glass baking dish with oil
- Line the bottom of the pan with 6 tortillas
- Spread 1/2 the refried beans on the tortillas
- Add 1/2 the meat sauce and spread evenly over the beans
- Sprinkle 1/2 the cheese over the meat sauce
- Lay the other 6 tortillas over the cheese
- Repeat steps 9 through 11, ending with cheese.
- If you prefer, leave off the last layer of cheese.
- Bake for 1/2 hour, add the last layer of cheese during the last 15 minutes
- Slice into squares and enjoy!
This pan feeds my family of 7 when they are all here plus leftovers!!!
